Tasting Notes
The nose has hints of cassis, clove, pipe tobacco, and leather. The wine is big and juicy with dominant fruit flavors of blackberries and spice. For the finish the wine has hints of cocoa and fudge. Pairs nicely with beef, lamb or gamey meats.

This is our fifth bottling of our partnership wine with the North Olympic Land Trust. A portion of the sales for this wine are donated to the North Olympic Land Trust.
FINISHED WINE:60% Cabernet Sauvignon 20% Syrah 14% Petit Verdot 6% Malbec
VINEYARDS: Lonesome Spring Ranch Yakima Valley
PRODUCTION: 30 cases (360 bottles)
WINE MAKING PROCESS: The grapes were hand-picked. The crushed grapes were cold soaked for 36 hours to stabilize color. Fermented on the skins 10 days. Each lot was fermented separately. Barrel aged 50 months. 1/2 of the barrels were new French oak.
