TASTING NOTES: On the nose the wine has bouquet of
cedar, licorice, soy and coconut spice. On the palate, the medium
body wine has red fruit flavors of Bing cherry and wild
strawberry. Barbera’s natural acidity gives this wine a nice zing
of freshness. Barrel aging gives the wine a finish of chocolate
cake and vanilla cream with twist orange zest.
Pairs nicely most traditional Italian dishes, risotto, red sauces, eggplant, and

WINE MAKING PROCESS: The grapes were hand-picked
in mid-October. The grapes were stemmed with 85% left as
whole berries. Fermented on the skins 6 days. Barrel aged in
French oak barrels for 33 months, one of which was new.
